Fried Cauliflower with Blue Cheese Sauce

Ingredients

  • Cauliflower - 1 head
  • Olive Oil - 1½ tablespoons
  • Salt - to taste
  • Blue Cheese - 2 tablespoons
  • Shallot - 1 head
  • Champagne Vinegar - 1 tablespoon
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Preheat the oven to 450°F (230°C). Grease a large baking sheet with oil.

Step 2

Cut the cauliflower head into 4 wedges lengthwise and trim the tough parts while keeping the shape. Brush with 0.5 tablespoons of olive oil and season with salt. Place on the baking sheet and bake in the oven for 15 minutes. Flip the pieces and roast for another 15–20 minutes until tender.

Step 3

Meanwhile, in a small bowl, mix the remaining olive oil, a pinch of salt and black pepper, crumbled cheese, vinegar, and minced shallot.

Step 4

Transfer the cauliflower to a serving dish, drizzle with the sauce, and serve.
