Ingredients
- Olive Oil - 2 fl oz
- Cauliflower - 2 lbs
- Garlic - 1 clove
- Meyer Lemon Juice - 1 fl oz
- Pitted olives - 2 fl oz
- Ocean salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 450 degrees Fahrenheit.
Step 2
Cut the cauliflower into thin pieces and place them in a bowl. Add 2 tablespoons of oil and 0.5 teaspoons each of salt and pepper. Mix well and spread in an even layer on a baking dish or oven-safe skillet. Place in the oven for about 25 minutes, stirring occasionally, until tender and golden.
Step 3
Meanwhile, in a mortar, crush the garlic with a pinch of salt. Transfer to a small bowl and add lemon juice, the remaining olive oil, finely chopped olives, and a little salt and pepper.
Step 4
Place the cauliflower on a plate and drizzle with the vinaigrette.
