Ingredients
- Cherry - 5 oz
- Butter - 0 oz
- Olive Oil - 0 fl oz
- Shallot - 1 head
- Honey - 2 spoons
- Champagne Vinegar - 1 tablespoon
- Cinnamon - a pinch
- Black Cumin (Cumin) - a pinch
- Ginger - 0 oz
- Salted crackers - 0 oz
- Adyghe cheese - 5 oz
- Fresh basil leaves - to taste
- Clove - 2 pieces
Step by Step guide
Step 1
In a saucepan, heat the butter and olive oil, sauté the chopped shallots until translucent, add honey, stir, then add 100g of pitted cherries and 20ml of water, and stir for one minute.
Step 2
Add vinegar, cinnamon, cloves, cumin, and grated ginger, stir well, and remove from heat.
Step 3
Heat the pistachios with 30 ml of olive oil and blend until you achieve a crumbly paste.
Step 4
In a skillet, heat olive oil and sauté thick slices of cheese for a couple of minutes on each side. Reserve some fresh cheese for serving.
Step 5
Arrange the cheese on a plate, drizzle with cherry chutney, top with crushed pistachios, add some fresh cherries, garnish with torn basil, and sprinkle with small slices of fresh, unroasted cheese.
