Description
Chicken feet in Chinese cuisine are akin to frog legs in French cuisine. A delicacy that is appreciated not only for its flavor but also for its gelatinous, slightly sticky texture and ability to absorb the flavors of spices. The starchy coating gives the feet a crispy golden crust, garlic adds aroma, and the blend of sauces creates such a rich flavor in the dipping sauce that within two minutes, while gnawing on the toes and bones, you forget you are actually eating feet.
