Description
You can grate the carrots, but I prefer them in firm cubes.
Ingredients
- Eggplants - 5 pieces
- Carrot - 1 piece
- Sweet Pepper - 2 pieces
- Onion - 2 pieces
- Tomatoes - 2 pieces
- Safflower Oil - 6 teaspoons
- Salt - to taste
- Ground Black Pepper - to taste
- Garlic - 1 clove
Step by Step guide
Step 1
Peel the eggplants, cut them into cubes, sprinkle with salt, let them sit for a while, and then fry in vegetable oil until tender.
Step 2
Dice the carrot and onion, and sauté them separately in oil until the carrot becomes tender.
Step 3
Add the diced bell pepper to the onion and carrot, and sauté for another 5 minutes.
Step 4
Next, add the diced tomato, season with salt, and sauté for another 5–7 minutes.
Step 5
Then add the eggplant, grated garlic, season with salt, cover with a lid, and simmer for another 5 minutes.
Step 6
Allow the prepared caviar to cool before serving.
