Step by Step guide
Step 1
Cut the eggplants into small pieces.
Step 2
In a skillet, heat the olive oil and fry the eggplants in batches until soft and golden brown. Drain on paper towels.
Step 3
Transfer to a serving dish and drizzle with balsamic vinegar. Sprinkle with minced garlic and finely chopped mint. Season with salt and pepper and serve.
