Description

Eggplants should be medium-sized, about 10-12 cm long.

Ingredients

  • Eggplants - 6 pieces
  • Olive Oil - 8 fl oz
  • Garlic - 2 cloves
  • Mint Leaves - 5 tablespoons
  • Salt - to taste
  • Balsamic Vinegar - 1 fl oz
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Cut the eggplants into small pieces.

Step 2

In a skillet, heat the olive oil and fry the eggplants in batches until soft and golden brown. Drain on paper towels.

Step 3

Transfer to a serving dish and drizzle with balsamic vinegar. Sprinkle with minced garlic and finely chopped mint. Season with salt and pepper and serve.
