Ingredients
- Garlic - 4 cloves
- Ground ancho chili pepper - 2 pieces
- Courgette - 2 pieces
- Orange Bell Peppers - 1 piece
- Lemongrass - 1 stalk
- Fresh Mushrooms - 5.3 oz
- Soy Sauce - 1 tablespoon
- Snap Peas - 5.3 oz
- Apple juice with pulp - 1 tablespoon
- Lime - 1 piece
- Safflower Oil - 2 tablespoons
- Halloumi Cheese - 8.8 oz
- Cilantro - to taste
Step by Step guide
Step 1
Finely chop the garlic, green chilies, and lemongrass (or process everything in a food processor).
Step 2
Slice the zucchini thinly, cut the bell pepper into small pieces, slice the mushrooms thinly, and cut the snap peas diagonally into small pieces.
Step 3
In a small bowl, mix the soy sauce, apple juice, and the juice and grated zest of the lime.
Step 4
Meanwhile, heat a wok well and fry the diced halloumi until golden brown. Transfer to a plate and keep warm.
Step 5
In the wok, heat the sunflower oil and add the mixture with lemongrass, sauté until fragrant, but do not let the garlic burn. First, add the zucchini and sauté for a minute, then add the green bell pepper and sauté as well. Next, add the mushrooms, sauté for another minute, and finally add the snap peas. Sauté lightly and pour in the soy sauce mixture.
Step 6
Quickly stir-fry for a minute, add the halloumi and a handful of chopped cilantro. Mix and serve with boiled rice.
