- Olive Oil - 1 tablespoon
- Coarse Salt - to taste
- Spanish onions - 1 head
- Ground Black Pepper - to taste
- Orange Bell Peppers - 3 pieces
- Mild Chili Spice - 1 piece
- Red Wine Vinegar - 3 tablespoons
- Fresh basil leaves - 2 tablespoons

Step 1
In a large skillet, heat the olive oil over medium heat. Add the sliced red onion, season with salt and pepper. Sauté, stirring, until softened, about 3 minutes.
Step 2
Meanwhile, remove the seeds from the peppers and slice them into thin strips. Add them to the onion along with the thinly sliced chili (optional). Mix well. Season again with salt and pepper, drizzle with vinegar, cover, and cook until softened, about 3 minutes. Then stir in the oregano.
