Fried ramps in buttermilk

Ingredients

  • Ramps - 8.5 oz
  • Buttermilk - 16 fl oz
  • Wheat Flour - 4.2 oz
  • Coarse Salt - 1 tablespoon
  • Ground Black Pepper - 1 tablespoon
  • Cayenne Pepper - ½ teaspoon
  • Vegetable Oil - to taste
  • Lemon - 1 piece

Step by Step guide

Step 1

Separate the leaves from the ramps' stalks, saving the leaves for another dish.

Step 2

Pour the buttermilk into a shallow dish. Combine the flour, salt, black pepper, and cayenne pepper in another shallow dish.

Step 3

Dredge the ramps' stalks in the flour mixture, then dip in the buttermilk, and then back into the flour mixture.

Step 4

Place a thermometer in a large pot. Pour in the oil (it should be 5 cm deep); heat the oil over medium heat to 180˚C.

Step 5

Fry the stalks until golden brown for about 2 minutes.

Step 6

Transfer to paper towels; sprinkle with salt. Serve with a slice of lemon.
