Description
It's important not to overcook the clams, or they will become 'rubbery'. Cayenne pepper can be omitted. Substitute with parsley. A baguette or ciabatta is essential.

- Razor Clams - 17.6 oz
- Garlic - 2 cloves
- Cayenne Pepper - 1 piece
- Olive Oil - 5 tablespoons
Step by Step guide
Step 1
Thoroughly rinse the clams under running water — there is sand in the shells. If the clams are frozen, leave them to thaw in cold salted water until the shells open.
Step 2
Slice the garlic into thin pieces. Cut the cayenne pepper into rings.
Step 3
Heat the oil in a pan until very hot. Sauté the garlic and pepper until golden.
Step 4
Add the clams. Fry for 2 minutes. Once the shells are fully open, turn them muscle side down. Fry for another 3 minutes.
Step 5
Serve immediately drizzled with the remaining oil from frying. Add lemon juice to taste.
