Ingredients
- Miso Paste - 2 tablespoons
- Mirin - 2 tablespoons
- Soy Sauce - 2 teaspoons
- Sugar - 1½ teaspoons
- Scallops - 8 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Dry White Wine - 4 tablespoons
- Vegetable Oil - 2 tablespoons
- Garlic - 2 cloves
- Dijon Mustard - 1 teaspoon
- Cream (40%) - 2 tablespoons
- Mixed salad greens - to taste
- Green onion tops - 2 pieces
- Grated Pecorino Pepato Cheese - ½ tablespoon
Step by Step guide
Step 1
In a small bowl, mix together mirin, miso, soy sauce, and sugar.
Step 2
Pat the scallops dry, then season with salt and pepper.
Step 3
In a wok over medium heat, heat the vegetable oil. Add the scallops and fry for 1-2 minutes on each side. Transfer to a plate.
Step 4
In the wok, pour in the wine, then add the miso mixture and minced garlic, bring to a boil, remove from heat, and stir in the mustard and cream. If necessary, add a little water to achieve your desired consistency.
Step 5
On plates, arrange the salad greens, top with scallops, drizzle with sauce, and sprinkle with chopped green onions and Parmesan.
