Ingredients
- Smelt - 6 lbs
- Coarse Salt - to taste
- Olive Oil - 1 fl oz
- Wheat Flour - 5.6 oz
- Cayenne Pepper - 1 tablespoon
- Ground Dried Garlic - 1 tablespoon
- English Dry Mustard - 1 tablespoon
- Ground Black Pepper - 1 tablespoon
- Chard - 31.7 oz
- Lemon - 1 piece
Step by Step guide
Step 1
Combine the salt, flour, and all the other spices in a bowl. Heat a large, deep skillet over high heat, then reduce to medium and add the olive oil. Dredge the smelt in the flour and spice mixture on all sides.
Step 2
Place the fish in the skillet, leaving some space between the pieces, and fry for about two minutes until a bright golden crust forms. Then, flip them over and cook for another minute on the other side.
Step 3
Transfer the fish to paper towels, then add the Swiss chard to the skillet where the fish was cooked. Lightly season with salt and sauté, stirring with a spatula, for about three minutes. Once the Swiss chard releases its water, increase the heat and evaporate all the excess liquid, continuing to stir.
Step 4
Place a small amount of sautéed Swiss chard on the serving plates, and top it with fried smelt.
