Remove the stems and rinse the sorrel leaves. Pour three to four liters of water into a large pot and add one tablespoon of salt. Add the sorrel to the pot, bring to a boil over high heat, and cook for ten minutes. Drain the water. Finely chop the leaves.

Heat olive oil in a skillet. Crush the garlic with the flat side of a knife and add it to the oil—cook for a few minutes until the garlic darkens, then remove and discard it. Add the sorrel and cook, stirring.
