Description
You can make these sandwiches not only in pita but also in lavash, simply wrapping the filling like a roll. You can also add some meat or include garlic and onion. Everything is to your taste. Enjoy your meal!

- Pita - 4 pieces
- Eggplants - 1 piece
- Courgette - 1 piece
- Orange Bell Peppers - 1 piece
- Dill - 5 sprigs
- Pesto - 3 tablespoons
- Salt - to taste
- Vegetable Oil - 3 fl oz
Step by Step guide
Step 1
Prepare the ingredients.
Step 2
Cut the eggplant lengthwise, then into small pieces.
Step 3
Pour vegetable oil into a frying pan and add the chopped eggplant.
Step 4
Add salt to taste.
Step 5
Stir and fry for 10 minutes.
Step 6
Transfer the cooked eggplant to a bowl.
Step 7
Next, cut the zucchini into small pieces.
Step 8
Fry the zucchini in oil for 5–7 minutes, adding salt to taste.

Transfer the cooked zucchini to the bowl with the eggplant.

Remove the seeds and stem from the bell pepper, and cut it into strips.

Fry the bell pepper in vegetable oil, adding salt to taste, just like the eggplant and zucchini.

Transfer the cooked bell pepper to the bowl with the other vegetables.

Wash and dry the dill.

Chop it finely.

Add the dill to the vegetables in the bowl.

Mix everything together and add the pesto.

Take out the pita.

Open it carefully to avoid tearing.
