- New Potatoes - 2 lbs
- Olive Oil - 2 fl oz
- Fresh Rose Hips - 3 sprigs
- Garlic - 3 cloves
- Coarse Salt - 1.5 teaspoons
- Capers - 3 tablespoons
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
Place the halved potatoes in a single layer on a baking sheet, drizzle with olive oil, and sprinkle with chopped rosemary, minced garlic, and salt. Mix well and spread evenly.
Step 3
Roast the potatoes for about 45 minutes, stirring every 15 minutes.
Step 4
Add the capers and cook for another 5 minutes. Sprinkle with pepper and transfer to a bowl. Garnish with sprigs of rosemary and serve.
