Ingredients
- Salt - to taste
- Garlic - 2 cloves
- Onion - 1 piece
- Bacon - 6 pieces
- Safflower Oil - 12 fl oz
- Wheat Flour - 1.8 oz
- Courgette - 2 lbs
Step by Step guide
Step 1
Peel the zucchini and cut it into thin slices. Finely chop the onion and garlic. Preheat the oven to 320°F.
Step 2
Salt the zucchini. Place the flour on a plate. Heat the oil in a deep skillet to 356°F. Dip the zucchini slices in the flour one by one, then fry them until golden brown. Remove with a slotted spoon and arrange them in a spiral in a round baking dish. Keep warm in the oven.
Step 3
Add the bacon to the skillet and cook until crispy and golden. Drain off excess oil and place in the oven to keep warm.
Step 4
Pour 5 tablespoons of oil into another skillet: sauté the onion and garlic until translucent – about 5-6 minutes.
Step 5
Pour the onion mixture over the zucchini in the dish, then layer the bacon slices on top – and bake in the oven for 5 minutes at 446°F. Serve immediately.
