Galician Lamb Soup
Ingredients
- Onion - 1 head
- Lamb - 17.6 oz
- Orange Bell Peppers - 1 piece
- Tomatoes - 3 pieces
- Carrot - 1 piece
- Rice - 1.8 oz
- Dill - to taste
- Sage - to taste
- Tarragon - to taste
- Ground coriander - to taste
- Mint - to taste
Step by Step guide
Step 1
Pour cold water over the lamb and bring to a boil. Skim off the foam and cook until done, adding the onion. Season with salt.
Step 2
Remove the meat, pass it through a meat grinder, and return it to the soup.
Step 3
Add the rice and cook until done. Season with salt.
Step 4
10 minutes before the soup is ready, add the diced bell pepper.
Step 5
Peel the tomatoes and dice them.
Step 6
Grate the carrot on a coarse grater.
Step 7
Sauté the carrot with the tomatoes and add to the soup.
Step 8
Chop the herbs and add to the soup.
