Description
Game broth is usually prepared when cooking game for salads or for serving with mayonnaise, as well as when there are bones and trimmings from game that will be used for main dishes (for example, when making pheasant, grouse, partridge, or woodcock cutlets).

- Pheasant - 1 piece
- Parsley - 1 stem
- Carrot - 1 piece
- Onion - 1 piece
- Celery stalk - 2 pieces
- Water - 3 qt
- Salt - to taste
Step by Step guide
Step 1
Chop the bones and trimmings into smaller pieces, place them in a soup pot, add the sautéed carrot, parsley, and onion, then add the celery stalks (or a few slices of celery root), pour in the water, and place on the heat.
Step 2
When the broth comes to a boil, skim off the foam and continue to simmer on low heat for about an hour. Before finishing, season the broth with salt, let it settle, and then strain.
