Ingredients
- Pheasant - 2 pieces
- Beef - 2 lbs
- Water - 1 qt
- Turnips - 2 pieces
- Parsley - 1 piece
- Cream 22% - 8 fl oz
- Egg white - 2 pieces
- Bay leaf - 2 pieces
- Butter - 1.1 oz
- Salt - to taste
- Croutons - to taste
Step by Step guide
Step 1
Boil the broth from the beef with carrots, parsley root, bay leaves, and salt.
Step 2
While the broth is cooking, sauté the grouse or partridges in butter.
Step 3
Remove the meat from the bones, discarding the skin.
Step 4
Grind the meat in a mortar.
Step 5
Strain the finished broth and add 120 ml of broth to the ground game meat. Mix and pass through a sieve.
Step 6
Pour in the cream and add the 2 beaten egg yolks.
Step 7
Pour the resulting mixture into the broth, place on the heat, and warm without boiling.
Step 8
Serve with croutons.
