Description

You can also chop the tomatoes with the other ingredients in a food processor until they are finely chopped but not too smooth.

Ingredients

  • Red cocktail cherry - 7.1 oz
  • Yellow Cherry Tomatoes - 7.1 oz
  • Olive Oil - 3 spoons
  • Spanish onions - ½ heads
  • Fresh basil leaves - 3 spoons
  • Ciabatta - 1 piece
  • Balsamic Vinegar - 1½ spoons
  • Garlic - 1 clove

Step by Step guide

Step 1

In a small bowl, combine halved tomatoes, finely chopped onion, 3 tablespoons of olive oil, chopped basil, and balsamic vinegar. Season with salt and pepper to taste.

Step 2

Preheat the grill in the oven. Cut the focaccia in half and place one half on a baking sheet, cut side up. Brush with olive oil and place under the grill for about 2 minutes until golden brown. Remove from the oven and quickly rub with a clove of garlic. Cut into 4 pieces.

Step 3

Top with the tomato mixture and serve.
