Garlic Cream Soup

Ingredients

  • Chicken Broth - 1 qt
  • Salad Potatoes - 2 lbs
  • Garlic - 15 cloves
  • Leek - 2 pieces
  • Olive Oil - 2 fl oz
  • Butter - 1.8 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Croutons - to taste

Step by Step guide

Step 1

Heat 2 teaspoons of oil in a pot.

Step 2

Add the chopped leek and garlic. Cook over medium heat for two minutes until the vegetables start to soften.

Step 3

Add the broth, chopped potatoes, and salt. Bring to a boil.

Step 4

Reduce the heat and cover. Simmer for 30 minutes.

Step 5

While the soup is cooking, heat the remaining oil in a large skillet and add the bread cubes.

Step 6

Stir constantly and sauté until golden brown. Set aside.

Step 7

When the soup is ready, blend all the ingredients until smooth and creamy.

Step 8

Add the butter and mix thoroughly.

Step 9

Serve the soup with the prepared croutons and a glass of red wine.
