Ingredients
- Chicken Broth - 1 qt
- Salad Potatoes - 2 lbs
- Garlic - 15 cloves
- Leek - 2 pieces
- Olive Oil - 2 fl oz
- Butter - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Croutons - to taste
Step by Step guide
Step 1
Heat 2 teaspoons of oil in a pot.
Step 2
Add the chopped leek and garlic. Cook over medium heat for two minutes until the vegetables start to soften.
Step 3
Add the broth, chopped potatoes, and salt. Bring to a boil.
Step 4
Reduce the heat and cover. Simmer for 30 minutes.
Step 5
While the soup is cooking, heat the remaining oil in a large skillet and add the bread cubes.
