Garlic-Infused Baked Potatoes
Ingredients
- New Potatoes - 12 oz
- Garlic - 6 cloves
- Olive Oil - 1 tablespoon
- Butter - 2 spoons
- Sour Cream - 5 teaspoons
- Chives - 3 spoons
Step by Step guide
Step 1
Generously grease a heatproof dish with butter.
Step 2
Boil the potatoes with garlic in salted boiling water until tender, about 15 minutes. Drain and let sit for 5 minutes. Remove the garlic. Transfer the potatoes to a baking dish and gently smash each potato with a wooden spoon to open them up. Drizzle with olive oil and place a small piece of butter on top of each. Season with salt and pepper.
Step 3
Preheat the grill in the oven and place the dish underneath for 8-10 minutes, until the potatoes are golden and crispy. Remove from the oven and top each one with a small amount of sour cream and sprinkle with chives.
