- Olive Oil - 8 fl oz
- White bread - 5.3 oz
- Garlic - 5 cloves
- Onion - ¼ head
- Paprika - 1 teaspoon
- Water - 1 qt
- Parsley - 1 stem
- Chicken Egg - 6 pieces
- Salt - to taste
Step by Step guide
Step 1
Heat the olive oil in a skillet over medium heat. Fry thin slices of bread for 2 minutes on each side until golden brown. Use a spatula to transfer them to a plate lined with paper towels.
Step 2
Drain excess oil from the skillet, leaving about 4 tablespoons, and return the skillet to the heat. Add the garlic cloves and finely chopped onion, and cook over low heat, stirring, for 5 minutes until they become soft. Remove the skillet from heat and add paprika.
Step 3
Place the fried bread in a heatproof dish with sturdy walls, like a Dutch oven, and top with the onion mixture, removing the garlic beforehand. Pour in boiling water and add salt. Mix well, add parsley, and bring to a boil, then reduce the heat and simmer for 5 minutes.
Step 4
Preheat the oven to 356°F. Transfer the dish with the soup to the oven and cook for another 7 minutes without a lid: a crust should form on the soup.
Step 5
Remove the dish from the oven, pour the eggs over the crust, add salt, and return the dish to the oven — bake until the egg whites are fully cooked. Serve immediately.
