- Orange Bell Peppers - 0.9 oz
- Cucumbers - 0.7 oz
- 20% Sour Cream - 0.7 oz
- Eel - 1.8 oz
- Strawberry - 1.4 oz
- Basil - 0.2 oz
- Ricotta cheese - 1.1 oz
- Corn Salad - 0.7 oz
- Scallions - 0.2 oz
- Starch film - 0.7 oz
- Raspberry leaves - 1 fl oz
- Grapeseed Oil - 3 fl oz
- Sugar - 1.1 oz
- Grated Ginger Root - 0.7 oz
- Olive Oil - 0 fl oz
Step by Step guide
Step 1
For the gazpacho: blend the lettuce, strawberries, basil, ricotta, corn salad, and green onion in a blender and strain through a sieve.
Step 2
For the sauce: combine raspberry vinegar, grapeseed oil, sugar, and ginger root in a blender, blend, let the mixture steep for a day, and blend again. Then add olive oil to this mixture and mix well.
Step 3
For the fruit leather: blend the ingredients left after straining for the gazpacho, add starch, and cook. After that, evenly spread the mixture on a silicone mat and dry for a day at 140°F. Then cut into strips.
Step 4
Roast the bell pepper at 356°F for 10 minutes, peel off the skin, and slice.
Step 5
Slice the cucumbers thinly.
Step 6
On a plate, arrange the roasted pepper, cucumbers, fruit leather, pour the gazpacho, and top with sour cream. Garnish with microgreens.
