Ingredients
- Suluguni Cheese - 10 pieces
- Cottage cheese - 10.6 oz
- Sour Cream - 2.5 oz
- Fresh Mint - 1.4 oz
- Cilantro - 0.9 oz
- Ground ancho chili pepper - ½ pieces
- Walnuts - 7.1 oz
- Garlic - 2 cloves
- Khmeli-suneli - 1½ spoons
- Ground coriander - ½ spoons
- Uchiko Suneli - ½ spoons
- Saffron - 1½ spoons
- Mild Chili Spice - 1 tablespoon
- Cucumbers - 3.5 oz
- Mixed tomatoes of different colors - 3.5 oz
- Tarragon - 1.1 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Chop the mint, cilantro, and chili pepper. Mix with the cottage cheese and sour cream, then season with salt and pepper to taste.
Step 2
In a blender, blend the nuts and garlic with khmeli-suneli, coriander, ucho-suneli, saffron, chili, salt, and 200 ml of water. The mixture should have a consistency similar to that of not very thick sour cream.
Step 3
Slice the cucumbers into thin strips and the tomatoes into thin half-moons. Spread a thin layer of the cheese filling on the suluguni, then layer the tomatoes, cucumbers, and tarragon leaves on top. Roll it into a tube and cut it in half diagonally. Serve with a walnut sauce.
