Ingredients
- Turnips - 31.7 oz
- Chicken Broth - 28 fl oz
- Dry White Wine - 2 tablespoons
- Dijon Mustard - 1 teaspoon
- Sugar - 1 teaspoon
- Chopped Sage Leaves - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Use young turnips. Peel them, place in a pot of boiling water, and cook for 3 minutes.
Step 2
Drain and return to the pot. Pour in the vegetable broth, reserving some for glazing, bring to a boil, and simmer on low heat for about 10 minutes, until the turnips are tender.
Step 3
Arrange the cooked turnips on a warmed plate and keep warm while preparing the glaze.
Step 4
For the glaze, mix the mustard with the white wine, add the reserved broth. Heat, season with salt and pepper. Bring to a boil and cook on high heat until it reaches a syrupy consistency.
Step 5
Drizzle the glaze over the turnips, sprinkle with chopped parsley, and serve.
