Ingredients
- Sweet Pepper - 3 pieces
- Goat cheese - 7.1 oz
- Semi-soft cream cheese - 3.5 oz
- Walnuts - 1.1 oz
- Sourdough Bread - 8 pieces
Step by Step guide
Step 1
Place the peppers on a baking sheet and put them in a preheated oven at 428°F for 15 minutes. Turn the peppers a few times during baking. When they become soft and the skin is covered with dark scorch marks, transfer them to a plastic bag and seal it tightly. Leave them for 15 minutes to allow the peppers to 'sweat'.
Step 2
Remove the skin and seeds from the peppers and slice them into strips.
Step 3
Mix the goat cheese with half of the cream cheese.
Step 4
Spread a thick layer of the cheese mixture on half of the slices of bread.
Step 5
Top with strips of pepper and cover with the remaining slices of bread.
Step 6
Using a sharp knife, trim the crusts off the sandwiches, then cut them into triangles by slicing diagonally twice.
Step 7
Spread cream cheese on the cut sides of the sandwiches and roll the edges in chopped walnuts.
