Ingredients
- Spanish onions - 2 heads
- Wheat Flour - ¾ cup
- Baking Powder - 2 teaspoons
- Large eggs - 3 pieces
- Breadcrumbs - 1½ cups
- Spices - 1 tablespoon
- Olive Oil - to taste
Step by Step guide
Step 1
Preheat the oven to 450°F (230°C). Grease 2 large baking sheets with olive oil.
Step 2
Slice the onions into rings about 1 cm thick, separating and discarding the very small ones. Place the larger rings in a bowl and cover them with ice water.
Step 3
In a bowl, mix the flour and baking powder. In another bowl, lightly beat the eggs. In a third bowl, place the breadcrumbs and spices.
Step 4
Taking one ring at a time, coat it first in flour, then in egg, and finally in breadcrumbs. Place on the baking sheet. Repeat with the remaining onions. Generously drizzle olive oil on top.
Step 5
Bake in the oven for 10 minutes, then flip each ring and bake for another 8–10 minutes until golden brown.
