Goulash Soup

Ingredients

  • Orange Bell Peppers - 2 pieces
  • Carrot - 1 piece
  • Garlic - 3 cloves
  • Potato - 1 piece
  • Celery salt - ¼ piece
  • Onion - 1 piece
  • Olive Oil - 3 tablespoons
  • Sugar - 1 teaspoon
  • Dijon Mustard - 1 teaspoon
  • Adjika - 1 teaspoon
  • Black Cumin (Cumin) - a pinch
  • Paprika - a pinch
  • Water - 25 fl oz
  • Salt - to taste
  • Ground coriander - a pinch
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Roast the peppers in the oven beforehand, place them in a bowl, cover with a lid or plastic wrap, and let them cool. This will make it easy to peel off the skin. You can also make the soup with fresh peppers, but roasted ones taste better.

Step 2

Peel and dice the carrot, potato, onion, and celery root into small cubes, then sauté them in olive oil in a saucepan or directly in a pot.

Step 3

Pour in the water, bring to a boil, and cook for 15–20 minutes until the potatoes are tender.

Step 4

Add the peeled and roughly chopped peppers, spices, minced garlic, salt, pepper, and sugar, and cook for another 10–15 minutes.

Step 5

Blend a ladle of the soup in a blender and return it to the pot for thickness.
