Governor's Eggplant Caviar
Ingredients
- Eggplants - 2 pieces
- Carrot - 1 piece
- Onion - ½ heads
- Garlic - 1 clove
- Green Apples - 1 piece
- Tomatoes - 6 pieces
- Safflower Oil - to taste
- Parsley - 1 bunch
- Cilantro - 1 bunch
- Salt - to taste
- Sugar - to taste
Step by Step guide
Step 1
Peel the eggplants, slice them lengthwise, and soak them in salted water under a weight for an hour. Drain well and fry.
Step 2
Sauté the chopped onion and grated carrot.
Step 3
Place sliced tomatoes (peeled) at the bottom of a pot, sprinkle with salt and sugar. Layer the following: carrots with onions, then thinly sliced apples (peeled), followed by eggplants, and then again tomatoes, apples, and eggplants. (There should be only one layer of onions and carrots.) Salt and sprinkle sugar on each layer, adding a little finely chopped garlic. Repeat until the pot is filled to two-thirds. The top layer should be chopped herbs.
Step 4
Cover with a lid, set over low heat for one and a half to two hours. Let cool and stir.
