Description
The perfect okroshka, where matsoni is used instead of kefir. Recipe from Chef John Smith of a popular American restaurant.
Ingredients
- Matsoni - 3 fl oz
- Rock Salt - 0 oz
- Radish - 1.1 oz
- Cucumbers - 1.1 oz
- Dill - 3 sprigs
- Parsley - 3 sprigs
- Scallions - 2 stalks
- Chicken Egg - 1 piece
Step by Step guide
Step 1
Pour the matsoni into a bowl, add 100 ml of cold sparkling water. Season with salt and mix thoroughly. Refrigerate until ready to serve.
Step 2
Cut the radish into strips about 2 mm thick. First, slice the cucumber diagonally across, then cut it into sticks.
Step 3
Remove the stems from the parsley and dill. Chop the leaves, and also chop the green onions.
Step 4
Add the chopped vegetables and herbs to the matsoni and mix well.
Step 5
Pour the soup into a bowl and place a halved egg on top. Serve while the soup is still warm.
