Ingredients
- Goat cheese - 7.1 oz
- Date honey - 2 tablespoons
- Water - 4 tablespoons
- Meyer Lemon Juice - 2 teaspoons
- Balsamic Vinegar - 1 teaspoon
- Fresh Rose Hips - 2 sprigs
- Garlic - 1 head
- Pistachios - 1 tablespoon
Step by Step guide
Step 1
Mix honey with water in a small saucepan, add vinegar and lemon juice, place on the stove, and bring to a boil.
Step 2
Peel the young garlic cloves, add them to the honey mixture, and cook for about 5 minutes, then add the rosemary sprigs. Cook until the syrup thickens.
Step 3
Toast the pine nuts without oil until golden brown.
Step 4
Cut the roll of goat cheese into 8 pieces, brush the cut sides with olive oil, and place in a preheated oven at 180°C (350°F) for 5–8 minutes.
Step 5
Arrange the gratinated medallions on plates, drizzle with honey syrup, sprinkle with nuts, and serve with any green salad.
