Ingredients
- Olive Oil - 4 fl oz
- Meyer Lemon Juice - 1 fl oz
- Shallot - ½ piece
- Garlic - 1 clove
- Dried Rosemary - 0.3 oz
- Chopped Sage Leaves - 1.1 oz
- Salad Potatoes - 5 pieces
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F. In a food processor, combine olive oil, lemon juice, shallot, garlic, oregano, and parsley. Season with salt and pepper to taste.

Blend until smooth.
Step 3
In a large bowl, toss the sliced potatoes with 60 ml of the prepared sauce. Reserve the rest. Arrange the potatoes in a single layer in a baking dish.
Step 4
Bake until golden and crispy, about 45 minutes to 1 hour. Flip the potatoes halfway through cooking.
Step 5
Transfer the cooked wedges to a serving dish and lightly drizzle with the prepared sauce.
