Ingredients
- Salad Potatoes - 12 oz
- Chopped almonds - 2.1 oz
- Breadcrumbs - ½ cup
- Garlic - 3 cloves
- Water - ½ cup
- Meyer Lemon Juice - 4 teaspoons
- Olive Oil - 0.6 cups
- Crackers - to taste
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Place the peeled potatoes in a pot, cover with water, add salt, and boil until tender, about 15 minutes.
Step 3
Spread the almonds and breadcrumbs on a baking sheet and bake in the oven for 8–10 minutes until golden, stirring occasionally. Let cool.
Step 4
In a food processor, chop the garlic, then add the breadcrumbs and almonds and chop again. Then pour in the water, add 1 tablespoon of lemon juice, and sprinkle in 0.75 teaspoons of salt. Mix well.
Step 5
Drain the potatoes and mash them with a fork. Transfer the nut mixture to the food processor and add the olive oil. Blend everything well until smooth and transfer to a bowl. Serve with crackers.
