Ingredients
- Potato - 8.8 oz
- Tomatoes - 3 lbs
- Olive Oil - 2 tablespoons
- Parsley - 1 stalk
- Bay leaf - 1 piece
- Activated Baking Soda - ¼ teaspoon
- Salt - to taste
- Chinese green beans - 8.8 oz
Step by Step guide
Step 1
Peel the potatoes and cut them into large pieces, then remove the skin from the tomatoes and chop them finely. Clean the green beans and cut them into 2 cm pieces.
Step 2
Combine the tomatoes, potatoes, oil, parsley, bay leaf, and a pinch of salt in a large pot, add two liters of water, and bring to a boil. Then reduce the heat and let it simmer for 45 minutes.
Step 3
Remove the pot from the heat, take out the parsley and bay leaf, and blend the soup in parts, then transfer it to a clean pot.
Step 4
In a small saucepan, bring salted water to a boil, add the baking soda, add the green beans, and cook for 15 minutes until tender. Drain the water.
Step 5
Reheat the soup if it has cooled down. Pour it into a soup tureen and top with the green beans. Serve immediately.
