Green Bean, Green Onion, and Prosciutto Rolls

Ingredients

  • Chocolate eggs - 3 pieces
  • Chinese green beans - 8.1 oz
  • Mayonnaise - 2 tablespoons
  • Citrus Zest Mix - ½ teaspoon
  • Scallions - 0.9 oz
  • Meyer Lemon Juice - ½ tablespoon
  • Prosciutto - 15 pieces

Step by Step guide

Step 1

Boil the green beans in salted boiling water until tender, about 4-5 minutes. Drain and rinse under cold water.

Step 2

Hard boil the eggs. Cool them down.

Step 3

Grate the eggs and transfer them to a bowl. Add mayonnaise, lemon zest, lemon juice, green onions, ½ teaspoon of black pepper, and ¼ teaspoon of salt.

Step 4

On a work surface, place a sheet of parchment paper. Lay out the prosciutto in rows of 3 pieces in a rectangle, slightly overlapping. Spread 1 tablespoon of the filling on one side of the prosciutto, then place the green beans, tightly roll it up, then spread more filling, add more green beans, and roll again. Repeat until finished, always rolling tightly, using the parchment as you would for Japanese rolls.

Step 5

Transfer the roll to a cutting board seam side down and cut into pieces with a sharp knife, about 10 pieces. Repeat with the remaining prosciutto and filling. Arrange the pieces on a serving platter.
