Step by Step guide
Step 1
Prepare a broth by boiling meat, 1 carrot, 1 onion, and a stalk of celery. After the water reaches a boil, be sure to skim off any foam, then reduce the heat and simmer for 2–3 hours. Once the broth is ready, use a slotted spoon to remove the cooked vegetables and meat.
Step 2
Cool the meat from the broth and cut it into small cubes.
Step 3
Sort through the sorrel, wash it, trim the stems, and cut it into strips.
Step 4
Peel the potatoes and cut them into sticks.
Step 5
Peel the carrot and cut it into matchsticks.
Step 6
Peel the onion and chop it into small cubes.
Step 7
Finely chop the herbs.
Step 8
Add the potatoes to the prepared broth and cook for 5–6 minutes.
Step 9
Add the onion and carrot, and cook for another 5–6 minutes.
Step 10
Add the chopped cooked meat to the soup.
Step 11
Add the sorrel, bring to a boil, and immediately turn off the heat. Do not let it boil.
Step 12
Season with herbs and let the soup steep for 15 minutes — the sorrel and herbs will fully release their aromas.
Step 13
Boil the eggs hard for 8 minutes after the water begins to boil. Cool them in cold water. Serve with sour cream and chopped boiled egg on top.
