Description
There's no need to grind the herbs and onions into a complete puree; they should retain some of their original texture.
Ingredients
- Mint - 3.5 oz
- Cilantro - 3.5 oz
- Fresh basil leaves - 1.8 oz
- Spanish onions - 1 head
- Lime - 2 pieces
- Rice Vinegar for Sushi - 1 tablespoon
- Sugar - 1 tablespoon
- Ground ancho chili pepper - 1 piece
- Salt - to taste

Prepare all the ingredients.
Step 2
Remove the leaves from the mint and basil, and trim the roots off the cilantro.
Step 3
Place all the herbs into a blender, add the chopped white onion, chili, sugar, and a pinch of salt.
Step 4
Pour in the lime juice and rice vinegar, add a shot of water (about 50 ml), and, by pressing the appropriate button, blend the mixture into a green, smooth puree that pairs well not only with chicken tikka skewers but also with any type of meat.
