Green Risotto with Spinach
Ingredients
- Onion - 2.5 oz
- Arborio rice - 7.1 oz
- Butter - 1.8 oz
- Spinach - 3.5 oz
- Mint - 0.5 oz
- Parmesan Cheese - 1.1 oz
- Chicken Broth - 22 fl oz
- Olive Oil - 1 fl oz
- Dry White Wine - 2 fl oz
- Chinese green beans - 2.6 oz
Step by Step guide
Step 1
Peel and finely chop the onion; heat olive oil and 0.5 of the butter in a deep skillet and sauté the onion over medium heat until translucent.
Step 2
Bring the vegetable broth to a boil; add the rice and sauté with the onion, stirring constantly, for 1 minute.
Step 3
Pour in 70 ml of dry white wine, let it evaporate, then add hot broth to the rice so that the broth is level with the rice, and simmer at a gentle boil, stirring constantly and adding broth as it evaporates for 18 minutes.
Step 4
Bring 500 ml of water to a boil, add the green beans and cook for 1.5 minutes, then add the spinach and mint (set aside 4-5 mint leaves for garnish), stir and drain in a colander.
Step 5
Lightly chop the beans with the herbs in a food processor, but not to a smooth puree, leaving small pieces; grate the parmesan cheese on a fine grater.
Step 6
Stir the chopped beans with herbs and the remaining butter into the rice, season with salt and pepper.
Step 7
Serve the rice on plates, sprinkle with parmesan, garnish with mint, and enjoy.
