Ingredients
- Arborio rice - 14.1 oz
- Olive Oil - 1 fl oz
- Broccoli - 14.1 oz
- Leek - 14.1 oz
- Garlic - 2 cloves
- Parsley - 1 bunch
- Onion - 1 head
- Salt - a pinch
- Dry White Wine - 7 fl oz
- Chicken Broth - 17 fl oz
Step by Step guide
Step 1
Finely chop the onion and garlic, slice the leek into rings or thin strips, separate the broccoli into small florets, and chop the stem into smaller pieces.
Step 2
Prepare vegetable or chicken broth and keep it hot.
Step 3
Pour olive oil into a wide and fairly deep skillet, lightly sauté the onion and garlic for a couple of minutes, then add the leek and broccoli. Simmer for about 5 minutes over low heat.
Step 4
Add the rice to the vegetables, mix well, and lightly sauté while stirring to ensure the rice is well coated with oil. Add the wine, just enough to slightly cover the rice. Keep on low heat, stirring constantly.
Step 5
When the wine has completely evaporated, start adding the broth gradually while stirring constantly. Season with salt to taste. Risotto requires constant attention! The rice should be slightly undercooked, al dente. A couple of minutes before it's done, add the chopped parsley.
