Ingredients
- Onion - 2 heads
- New Potatoes - 10.6 oz
- Leek - 5.3 oz
- Fresh basil leaves - 2 bunches
- Grated Ginger Root - 1.1 oz
- Olive Oil - 3 spoons
- Ocean salt - to taste
- Carrot - 5.3 oz
- Ground Black Pepper - to taste
- Chicken Broth - 1 qt
Step by Step guide
Step 1
Finely chop the onion and sauté it slowly in olive oil, stirring occasionally over low heat, until the onion becomes soft and golden. This should take about 20-25 minutes.
Step 2
Meanwhile, peel the potatoes and carrots, cut them into small cubes, and add them to the vegetable broth (or water). Bring to a boil.
Step 3
Thoroughly wash the leeks and spinach, then roughly chop them.
Step 4
Finely chop the ginger.
Step 5
In boiling water with partially cooked potatoes and carrots, add onion, spinach, and ginger, reduce the heat, and simmer for about 5 minutes.
Step 6
Add salt and pepper to taste.
Step 7
Pour into plates. Serve topped with a spoonful of golden onions.
