Ingredients
- Green pickled tomatoes - 3 pieces
- Celery stalk - 1 piece
- Shallot - 1.1 oz
- Garlic - 1 clove
- Ground ancho chili pepper - ½ piece
- Water - 10 fl oz
- Cucumber Brine - 3 fl oz
- Malt Vinegar - 0 fl oz
- Olive Oil - 2 tablespoons
- Cucumbers - 7.1 oz
- Scallions - 0.4 oz
- Nut Bread - 2 slices
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Chop the pickled green tomatoes coarsely.
Step 3
Place the tomatoes in a blender, add celery, shallot, garlic, and chili.
Step 4
Blend everything and dilute with water and the pickling brine to a soup consistency.
Step 5
Dice the cucumbers finely and chop the green onion.
Step 6
Pour the soup into bowls, drizzle with wine vinegar and olive oil.
Step 7
Add the cucumbers and green onion to the bowls.
Step 8
