Ingredients

  • Mixed tomatoes of different colors - 52.9 oz
  • Vegetable Oil - 3 fl oz
  • Parsley - 2.6 oz
  • Mild Chili Spice - to taste
  • Orange Bell Peppers - 10.6 oz
  • Salt - 2 tablespoons
  • Sugar - 4 tablespoons
  • 9% Vinegar - 5 fl oz
  • Garlic - 1 head

Prepare the necessary ingredients.

Wash the green tomatoes thoroughly under running water. Cut them into halves or quarters. Optionally, you can remove the stems.

Wash the parsley well, remove any excess, chop finely, and place it in a separate container.

Wash the red bell pepper thoroughly, remove the seeds and stems, cut into small cubes or strips, and add to the container with the chopped parsley.

Peel the garlic, wash it under running water, press it through a garlic press, and add it to the container with the chopped parsley and pepper.

Wash the chili pepper thoroughly, remove the seeds and stems, cut into small cubes or strips, and add it to the container with the chopped vegetables.

Mix all the ingredients well.

Add 2 tablespoons of salt, 4 tablespoons of sugar, 150 ml of 9% vinegar, and 100 ml of vegetable oil to the tomatoes.

Mix all the ingredients well, cover with a lid, and let marinate for about 2–3 hours, so the tomatoes release their juice. Stir the tomatoes occasionally.

Place the tomatoes into clean, dry jars washed with soda. Pour the brine into the jars.

Place a cotton kitchen towel at the bottom of a pot, cover the jars with lids but do not seal them, and place them in the pot. Pour room temperature water into the pot, so it reaches about 1 centimeter below the top of the jars.

Put the pot on the stove. Bring to a boil. Sterilize 0.5-liter jars for 15 minutes and 1-liter jars for 20 minutes from the moment the water boils.

Carefully remove the sterilized jars from the pot. Seal or screw them shut. Turn them upside down to ensure the jar is sealed well. Let cool at room temperature. Store in a cool place.
