Grilled Artichokes
Ingredients
- Water - 1 qt
- Olive Oil - 2 tablespoons
- Lemon - 1½ pieces
- Garlic - 3 cloves
- Thyme - 3 sprigs
- Artichoke bottoms - 8 pieces
- Ocean salt - to taste
Step by Step guide
Step 1
Preheat the grill.
Step 2
In a large saucepan, combine water, olive oil, 5 thin slices of lemon, and thyme. Bring to a boil over high heat. Trim the stems and all old leaves from the artichokes and add them to the saucepan. Bring to a boil again, reduce the heat, and simmer until tender, about 10 minutes. Drain.
Step 3
Brush the artichokes with olive oil and place them on the grill. Grill until browned on all sides, about 3 minutes. Drizzle with lemon juice and sprinkle with salt.
