Grilled Eggplant with Mozzarella

Ingredients

  • Eggplants - 1 piece
  • Salt - to taste
  • Olive Oil - ½ cup
  • Garlic - 2 cloves
  • Balsamic Vinegar - 3 tablespoons
  • Dried Rosemary - 1 teaspoon
  • Ground Black Pepper - to taste
  • Melted Cheese - 6 oz

Step by Step guide

Step 1

Slice the eggplant into thin pieces, sprinkle with salt, and place between 2 paper towels. Leave for 1-2 hours. Then rinse under cold water and dry.

Step 2

Preheat the grill or barbecue.

Step 3

In a bowl, mix olive oil, vinegar, minced garlic, oregano, and black pepper.

Step 4

Place the eggplant on the grill and brush with the flavored oil. Grill for about 8 minutes, constantly brushing and turning, until tender and golden brown.

Step 5

Place a thin slice of mozzarella on each piece and grill for another 2 minutes, until the cheese is slightly melted.
