Grilled Eggplant with Olive Oil

Ingredients

  • Eggplants - 4 pieces
  • Salt - 1 tablespoon
  • Garlic - 5 cloves
  • Ground Black Pepper - to taste
  • Olive Oil - 4 tablespoons
  • Lemon - ½ piece
  • Parsley - 1 bunch

Step by Step guide

Step 1

Pour some salt onto a dry grill pan. This is necessary to prevent the eggplants from sticking.

Step 2

Heat the pan while slicing the eggplants lengthwise into thin slices. They should not be completely transparent, but do not make them thicker than 3 mm, otherwise they will be difficult to cook through.

Step 3

Place the eggplants on the grill and leave them on high heat until the grill marks become very dark. Flip them and grill on the other side.

Step 4

While the eggplants are cooking, finely chop the garlic and herbs.

Step 5

As soon as the first batch of eggplants is ready, transfer them to a bowl, generously drizzle with olive oil, and sprinkle with garlic and herbs, add black pepper, and mix.

Step 6

Continue cooking the eggplants, gradually adding them to the bowl and mixing.

Step 7

Finally, drizzle with lemon juice (we didn't do this, but I prefer it this way) and serve with fresh bread. Buon appetito!
