Description
Recipe from a restaurant in Tver. Once again, it’s all about the sauce. Orange, cranberry, grenadine, and honey create a sweet and tangy berry component, while a blend of star anise, cloves, cinnamon, and pepper adds spice to the sauce. This sauce pairs wonderfully not only with cheese but also with steak or kebabs. Recipe taken from the book 'Taste Geography with John Smith. Culinary Guides.'
Ingredients
- Halloumi Cheese - 17.6 oz
- Butter - 0.7 oz
- Sugar - 2.1 oz
- Water - 1 fl oz
- Dried Apricots - 3.5 oz

- Cinnamon - 1 piece
- Star anise - 2 pieces
- Green peppercorns - 4 pieces
- Oranges - ½ pieces
- Cranberry - 1.1 oz

- Grenadine - 0 fl oz
Step by Step guide
Step 1
Slice the cheese into 1 cm thick pieces and grill them in a hot grill pan with oil for 1.5 minutes on each side.

Step 3
Serve the cheese on a plate, and present the sauce separately.
