Grilled marinated zucchini
Ingredients
- Courgette - 2 lbs
- Olive Oil - 5 teaspoons
- Water - 13 fl oz
- Salt - 0.9 oz
- Sugar - 1.1 oz
- Meyer Lemon Juice - 3 fl oz
- Garlic - 1 head
- Thyme - 5 sprigs
- Mild Chili Spice - 1 piece
- Dried Rosemary - 1 tablespoon
- Dried Chamomile - 1 tablespoon
- Safflower Oil - 7 fl oz
Step by Step guide
Step 1
If the zucchinis are young and tender, slice them into 1 cm thick rounds. If they are tough and old, peel them and remove the seeds, then cut into large chunks (in this case, you should end up with 1 kg of clean pulp).
Step 2
Season the zucchini with salt and pepper, then grill them in a skillet with olive oil until golden brown.
Step 3
Combine water with salt, sugar, lemon juice, finely chopped garlic, thyme, coarsely chopped chili pepper, mint, and marjoram.
Step 4
Bring the mixture to a boil. Stir well, add the sunflower oil, cook for another 1-2 minutes, and remove from heat.
Step 5
Arrange the sautéed zucchini in sterilized jars and pour hot marinade over them.
Step 6
Seal the jars with sterilized lids, turn them upside down, and let them cool to room temperature. Then return them to an upright position and store in a dark, cool place.
