Grilled Shrimp with Pineapple Salsa

Ingredients

  • Pineapple - ¾ piece
  • Spanish onions - 2.1 oz
  • Habanero Pepper - 1 tablespoon
  • Chopped Green Onions - 1 tablespoon
  • Apple Cider Vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Fresh Mint - 2 tablespoons
  • Salt - ¼ teaspoon
  • Lime Juice - 2 tablespoons
  • Mild Chili Spice - ¼ teaspoon
  • Peeled Cooked Shrimp - 24 pieces
  • Vegetable Oil - to taste

Step by Step guide

Step 1

Preheat the grill or barbecue.

Step 2

In a small bowl, mix finely chopped pineapple, finely chopped red onion, minced jalapeño pepper, cilantro, vinegar, and honey.

Step 3

In a large bowl, combine finely chopped mint, lime juice, salt, chili powder, and shrimp. Gently mix and thread 3 shrimp onto each of 8 wooden skewers. Place the skewers on an oiled grill and cook for about 1.5 minutes on each side until done. Transfer to plates and serve with pineapple salsa.
