Grilled Tomato Soup
Ingredients
- Butter - 4.4 oz
- Fresh basil leaves - 2 tablespoons
- Garlic - 1 clove
- Salt - to taste
- Ground Black Pepper - to taste
- Tomatoes - 8 pieces
Step by Step guide
Step 1
Select large tomatoes. They do not need to be washed.
Step 2
Place the tomatoes on the grill rack and position the rack in the middle of the fire.
Step 3
Occasionally turn the tomatoes in the flames until their skins are charred. Remove from the fire and, while still warm, peel off the burnt skins, cutting away the areas where the stems are attached.
Step 4
Add the butter to the still hot mixture and stir, allowing it to melt (you can slightly warm it on the stove or in the microwave if the tomatoes have cooled), and puree in a blender or with an immersion blender directly in the pot.
Step 5
Season with salt and pepper to taste, then add finely chopped basil leaves and garlic.
